Surfactant
A surface-active agent whose molecules contain a water-loving head and an oil-loving tail. Surfactants lower surface and interfacial tension, so they wet surfaces, emulsify oils, disperse solids and produce foam. They are classed as anionic, cationic, non-ionic or amphoteric according to the charge of the head group.
