Hygroscopic
Describes a substance that readily absorbs moisture from the air. Hygroscopic materials can gain weight, cake, hydrolyse or lose assay if left open, and some, called deliquescent, absorb enough water to dissolve. They should be stored tightly closed, often with desiccant, and weighed quickly. Water content is checked by Karl Fischer titration before critical use.
